Ingredients

  • 1 cup cooked quinoa
  • 1/2 red onion, diced
  • 1 container snacking tomatoes
  • 1 bunch of fresh parsley
  • 4 cloves garlic
  • 4 tablespoon Extra Virgin Olive Oil
  • 2 lemons
  • 1 container fat free feta cheese
  • 1 package pre-cooked frozen diced chicken breast

Preperation instructions

  • Cook quinoa according to package instructions. When cooked, remove from heat and place in large bowl to cool.
  • While the quinoa is cooking defrost the chicken.
  • Prepare the vegetables: dice the red onion, chop the parsley and tomatoes, mince the garlic.
  • When the chicken and quinoa are cooled, mix all the ingredients including the chicken and vegetables with the quinoa.
  • Drizzle the salad with olive oil and juice from 2 lemons. Sprinkle in the feta cheese.
