  • Fork or potato masher

Ingredients

  • 2-15 oz chickpeas or garbanzo beans, canned
  • 2 large ripe avocado
  • ½ cup fresh cilantro, chopped
  • 4 tablespoons red onion
  • 3 lime, juiced
  • Salt, pepper, cumin, garlic powder to taste
  • Bread of choice
  • Toppings (option): spinach, tomato slices, sprouts, cucumber

Preperation instructions

  • Rinse and drain the chickpeas. Place on a paper towel to remove excess liquid. You can also remove the outer skin here or leave them on.
  • In a medium bowl, smash the chickpeas and avocado together using a fork or potato masher. Add in the cilantro, red onion, lime juice and spices.
  • Once mixed, spread onto bread and top with your favorite sandwich toppings.
  • Notes: -This is best eaten day of so you will not be able to prepare it ahead of time as the avocado will turn brown. -If making 1 sandwich then use ½ cup of the chickpeas and 1/3 of the avocado.
