Ingredients

  • 8 oz penne protein pasta
  • 12 oz salmon
  • 4 cloves garlic
  • 1/4 cup extra virgin olive oil
  • pinch of crushed red pepper
  • 1 bag spinach
  • 1 package sliced bella mushrooms
  • 1/2 tsp. dried thyme

Preperation instructions

  • Preheat oven to 400 degrees. Line baking sheet with foil or parchment paper. Season salmon with salt, pepper and a pinch of thyme. Bake salmon for 15-20 minutes or until cooked through.
  • Fill large pot with water. Bring to boil and add pasta, cook per instructions on box. When cooked strain water.
  • Heat olive oil in a large skillet over medium heat. Add garlic and crushed red pepper and cook until fragrant. Add mushrooms, spinach, and thyme cook until soft, about 5 minutes.
  • Stir in pasta with a little bit of reserved boiled water, cook an additional 2 minutes. Add in Salmon and enjoy!
